Summertime Salads

After a day of paddling in the pond, swimming at the pool, and sunbathing at the beach, hunger calls for a satisfying treat, but it is way too hot for your typical comfort food: pizza, mac n’ cheese, a big bowl of chili. So how about a salad? I know, youre shrugging, but a salad doesn’t have to be a few leaves of lettuce, an assortment of veggies, and dressing out of the bottle. It can be flavorful, hearty, and chockfull of protein. This summer you can look forward to refreshing, fun, and creative salads that will excite your palate every single day!

Summertime Salad -1 “The Cobb”

Three hearts of romaine
6 hard boiled eggs
10 strips of bacon
1 lb of chicken breast
1 cup blue cheese
5 green onions
2 avocados
Pint of grape tomatoes

Ranch Dressing:
1/2 cup mayonnaise
1/3 cup buttermilk
1 teaspoon salt
1/2 teaspoon pepper
2 green onion or chives
1 garlic clove minced

Preheat oven to 400 degrees.
Place eggs in a pot and cover with water. Bring to boil. When it comes to a boil, turn heat off and let it sit for ten minutes. Then place the eggs in a bowl of ice and water to cool and make for easy peeling. Peel off shells and chop eggs into small chunks.

Line up the bacon on a slotted cookie sheet that is placed over a baking sheet. This will allow the bacon fat to drip onto the tray and off the bacon. Bake for 25-30 minutes until dry and crispy.Slice the bacon into thin strips.

Heat up a grill pan on medium high heat. Add grill seasoning (or just salt and pepper) to both sides of chicken breasts. Season well. Drizzle with olive oil and place on grill pan. Cook for 5-6 minutes on each side. Place in oven for 5 additional minutes (375 degrees) if it’s not cooked thoroughly inside. Let the chicken rest for three minutes and then slice on a diagonal 1/2 inch thick.

Wash romaine and chop. Slice avocados. Chop the green onions. Place the romaine into a deep serving bowl, and add each topping (including green onions, avocados, bacon, eggs, blue cheese, tomatoes, and chicken) in a section of the bowl.

Mix the mayonaise, buttermilk, salt, pepper, and chopped green onions. Serve with salad and enjoy!
