Shrimp Pizza

Shrimp PizzaIt’s Not your Pizzeria’s Pizza

I’m not one to order in pizza unless it’s 4am (post-evening of debauchery) and I’m half-articulate with a brain-crushing headache. So pizzas at our house are extra special. Tonight’s special: Shrimp Pizza with Spinach Pesto!

2 cups fresh spinach
3 cups shredded mozzarella
1/2 cup almonds
1/4 cup Parmesan cheese
3 cloves garlic 1/4 cup (2 tablespoons olive oil)
1/2 orange (or any color) bell pepper
1/2 a red onion
1/2 cup grape tomatoes
1 lb. shrimp
2 teaspoons Old bay seasoning
1/4 cup cupped parsley
Wheat pizza dough

Preheat oven to 400 degrees.

Roll out dough with flour (make sure you’ve allowed it to sit at room temperature for 20 minutes) and a floured rolling pin. Spray the bottom of a pizza tray with cooking spray and corn meal. Then place dough onto tray, drizzle with a little olive oil, prick dough with fork to prevent air bubbles in dough, and place in oven for five minutes.

Put spinach, almonds, parmesan cheese, garlic, and olive oil in a food processor until it turns a into a pesto (paste).

Slice thinly (julienne) onion and bell pepper and sauté with grape tomatoes in a small pan for five minutes on medium heat.

Take pizza out of oven and spread pesto all over dough (except for a 1/4 inch border around dough). Then distribute the mozzarella evenly on top of the pesto. Add the bell pepper, onions, and tomatoes on top (arrange neatly). Then place in oven for ten minutes.

Season shrimp with salt, pepper, and old bay. Place in a pre-heated medium-high heat pan with just a drizzle of olive oil. Cook for 1 minute on each side. remove from heat.

Take pizza out of oven once the cheese hast melted and the crust is a golden brown. Scatter the shrimp evenly on top of the pizza. Then sprinkle pizza with chopped parsley. Serve with a salad and white wine. Bon Appetit!
