Greek Omelet and Chorizo Skillet

Eggs: Two Ways

1 tablespoon butter
3 eggs
Splash of cream
1/2 cup fresh Spinach
1/4 cup feta cheese
Salt and pepper

Add butter to medium heat skillet. Beat eggs, cream, and a pinch of salt and pepper quickly for a few seconds. Pour egg onto skillet. After five minutes, when egg firms a bit add spinach and feta on one side of the skillet. Then lift other side of the egg with a spatula to cover the spinach and feta. (You are creating a half moon). After spinach wilts, remove from heat and serve.

Chorizo SkilletChorizo Skillet
Chorizo (8 oz)
3 eggs
10 red potatoes
1/4 cup Chihuahua cheese
2 bell peppers
1 red onion
1 teaspoon hot Paprika
1 tablespoon sweet paprika
1 teaspoon oregano
1 tablespoon garlic powder
1 tablespoon olive oil
1 tablespoon butter

Dice potatoes into 1/2 inch cubes. Toss into medium high skillet with olive oil. Add paprika (hot and sweet), oregano, and garlic powder, salt, and pepper and toss again. Cook for five minutes, then flip them over and cook for five more minutes. Dice (in same size as potatoes) the bell peppers and onions. (Reserve 1/2 for the chorizo). Toss bell peppers and onion with potatoes. Place skillet in a 400 degree oven for 7-10 minutes until potatoes are crispy.

Remove from oven with an oven mitt and transfer potatoes to plate and tent with foil.
Remove chorizo from casing and add to medium high heat skillet. (I use a vegan soy chorizo as a healthier option that is super packed with spices). Let it cook for a few minutes until crispy and flip over. Add the reserved bell pepper and onion and mix with chorizo. Cook for three minutes. Remove mixture from skillet to a plate and tent with foil.

Mix 3 eggs with a splash of cream, salt, and pepper. (I scrambled the eggs, but you can servethe eggs anyway you like). Add butter To medium heat skillet. Pour egg mixture into skillet. With a wooden spoon scrape sides of egg towards middle of skillet, until you have scrambled eggs (takes 2-3 minutes). Remove from skillet.

On a plate or skillet, arrange a thin layer of potatoes, then on top of that, the chorizo, then the cheese, and finally, the eggs. Sprinkle top with a garnish of chopped chives, scallions, or cilantro. Serve left over potatoes with Greek omelet.
